Carrot Cake with Cream Cheese Icing

Ingredients:

For Carrot Cake:
1 c. white sugar
1 c. vegetable oil
3 eggs
2 c. raw carrots, shredded
1⁄2 c. walnuts, chopped
1 1/3 c. white flour
1⁄2 tsp. salt
1 1/3 tsp. baking powder
1 1⁄2 tsp. baking soda
1 1/3 tsp. cinnamon

For Cream Cheese Icing:
4 oz. plain cream cheese
1⁄4 c. butter, softened
2 c. (approx) icing sugar
1⁄2 tsp. almond extract


Procedure:

Mix sugar and oil. Add eggs, one at a time, beating after each. Mix the flour, salt, soda, powder and cinnamon. Add the flour mixture to the liquids and beat. Stir carrots and walnuts to the combined mixture.
Pour into 2 – 8 inch pans. Bake at 300 degrees for 35-40 minutes or until done.
Beat all ingredients for cream cheese icing, adding the sugar gradually.
