Zucchini Fritti


Fresh Zucchini (small without seeds works best)
Ice Water
Flour – well seasoned with salt and pepper
Oil for frying – 350 degrees (soybean, corn, etc.)
Grated cheese


Slice zucchini into thin round discs 1/16” thick
Stack slices and cut cross wise into matchstick size pieces (julienne cut)
Soak in ice water for a least one hour or as long as overnight.
Remove from water and place directly into seasoned flour and coat evenly.
Sift off excess flour and fry at once.
Drain zucchini on towels and top with grated parmesan cheese.

Wine Suggestions:
Chablis, Sauvignon Blanc, Pinot Grigio
