Veal

Veal Abruzzi

Ingredients:

Veal Scallopine (milk fed, pound thin)
1 tsp. chopped shallots
1 tbsp. sliced sun-dried tomatoes
4 oz. sliced mushrooms
Brandy
1 oz. veal demi-glace
3 oz. heavy cream
1 tbsp whole butter
Asparagus
Sliced mozzarella cheese
Salt & pepper

Instructions:

Flour veal and sauté in olive oil until brown on both sides. Add shallots and de-glaze the pan with brandy. Next, add mushrooms and sun-dried tomatoes. Then add veal demi-glace, heavy cream, salt and pepper (to taste). Place asparagus on top of the veal and top it with mozzarella cheese. Bake in oven at 450 degrees until the cheese melts. Buon Appetito!
