Eggplant Parmigiana

Ingredients:

Sliced eggplant
Parmesan cheese
Eggs
Salt & pepper
Heavy cream
Sugar
All purpose flour
Vegetable oil
Marinara sauce
Mozzarella cheese


Procedure:

Slice the eggplant. Crack the eggs into a bowl and add a little bit of sugar and some heavy cream. Dip each slice of eggplant into the all purpose flour to coat and then dip in into the egg mixture. Dip again into the flour. Season with salt and pepper to taste. Pan fry the eggplant in vegetable oil until golden brown. Layer the slices of eggplant with mozzarella and parmesan cheeses and top with marinara sauce. Bake in the oven at 350 degrees until eggplant is soft and the cheese is melted. Serve with pasta marinara or a side of vegetables.
