Chicken Parmigiana


2 Whole Chicken Breasts, trimmed
8 Eggs
Parmesan Cheese
Salt and Pepper to taste
Vegetable Oil
Mozzarella cheese
Tomato sauce


Make sure that the chicken breasts are trimmed before beginning. Dip the chicken breasts in flour to cover. Prepare a bowl with 8 eggs, finely cut parsley, parmesan cheese, salt and pepper. Whip until nice and fluffy. Dip the chicken breasts into the egg wash and place into a heated sauté pan with vegetable oil. When chicken is cooked thoroughly in sauté pan, cover with tomato sauce and top with mozzarella cheese.
