Chicken & Fettuccine
5 – 6oz. chicken breasts
1 bag of spinach (ready to cook)
1 lb. plum tomatoes
1 clove of garlic
Extra virgin olive oil
1 lb. homemade fettuccine or fresh fettuccine pasta
Marinate the chicken breasts in extra virgin olive oil with a splash of balsamic vinegar for one hour. Next, grill the chicken to perfection but be careful not to overcook. Sauté the olive oil and sliced garlic in a frying pan until the garlic gets golden brown and then add the spinach (this should be a total cooking time of only 5 minutes). In a separate pot, boil water and add the fettuccine and a pinch of salt. Cook the pasta until al dente (boiling time for the pasta will vary, depending on the type of pasta used). To the fry pan, add diced, plum tomatoes, salt, pepper and basil. Pour sauce in fry pan over the cooked pasta and serve. Buon Appetito!
