All-Natural Pork, Peppers and Sweet Onions

Ingredients:

1.5 lb. Country Time Farm pork sausage (All Natural Antibiotic Free)
4 Tablespoons extra virgin olive oil
8 oz. Chopped Onions
4 oz White wine (dry)
1 cup Chicken stock or pasta water
1 lb. Rigatoni pasta
4 oz. Grated Parmesan cheese
16 oz. Marinara or tomato sauce
1/2 cup packed fresh chopped basil leaves
3 medium julienned bell peppers (preferably different colors - approximately 3 cups volume)

Directions:

Cook sausage in olive oil over moderate heat – do not brown too much. Remove when cooked and add onions - cook 2 minutes. Add peppers and cook for 5 minutes. Add wine, basil and tomato product. Cover and simmer. Add sausage and cook 8-10 minutes. Toss with pasta and cheese. Serve at once. Yields eight adult portions or sixteen appetizers.
