Risi Bisi

Yields 4 portions of side dish size

Ingredients:

1⁄4 c. small onion, diced
1 Tbsp. butter
1 Tbsp. extra virgin olive oil
Pinch of salt
2 c. rice, pre-cooked
1-1 1⁄2 c. stock
5 oz. cooked English peas
4-6 Tbsp. grated parmesan

Instructions:

Combine the onion, butter, extra virgin olive oil and salt and cook without coloring for 10 minutes (the onions need to be soft!). Add the pre-cooked rice, stock and English peas to the onion and heat throughout while stirring. Adjust the liquid as necessary. Sprinkle with the grated parmesan cheese and toss together. Serve at once.

Chef’s Notes: "I love this with meat dishes like Osso Buco or dishes where the rice provides a color and contrast."
