Tomato Saffron Soup

Ingredients:

2 leeks, chopped
2 c. carrots, chopped
1 1/3 c. celery, chopped
1⁄2 c. butter
1 1⁄2 canned tomatoes, chopped
1 lemon rind, grated
1 tsp. saffron
5 liters of chicken stock
salt and pepper to taste


Procedure:

Sweat the leeks, carrots, celery and butter.
Add the canned tomatoes, lemon rind, saffron and stock. Cook for 1⁄2 hour.
Pull and add salt and pepper to taste.
