Minestrone Soup

Ingredients:

2 large onions
2 carrots
10 riles of celery
4 zucchini
4 yellow squash
10 potatoes
4 15 oz. cannelloni beans
3 heads escarole
1 no. 10 can of tomatoes
2 bay leaves
3 gallons chicken broth
1 head napa cabbage
2-3 T. salt
1 tsp. black pepper
1 tsp. crushed garlic
Oil
4 oz. salad
4 oz. butter


Procedure:

Sauté medium chopped vegetables in oil for 10 minutes. Add tomato, stock and seasoning and cook until vegetables are tender. Add beans and cool in ice bath for future use.
