Vodka Sauce

Yields 4 entrées

Ingredients:

1 tbsp. chopped shallots
2 tbsp. butter
2 tbsp. olive oil
2 cups Fresh chopped plum tomatoes
1 tbsp. salt
1⁄4 tsp. black pepper
1⁄4 tsp. crushed red pepper
2 oz. dry white wine
1 cup Marinara sauce
1 cup Heavy cream
1 tbsp. chopped basil
1 tbsp. chopped parsley
1⁄2 cup vodka
1⁄2 cup grated Parmesan


Procedure:

Sauté shallots in butter and olive oil for a few minutes without browning. Add plum tomatoes, salt, black pepper and red pepper. Sautee for five minutes over medium heat. Add white wine and reduce by half volume. Add marinara sauce, heavy cream, basil and parsley. Cook five minutes more or until sauce is thick and coats the back of a spoon. Add Vodka and pasta and toss to blend ingredients. Sprinkle parmesan cheese over the pasta and serve at once.

Pasta Suggestions: Penne, Rigatoni, or something with a hole down the middle.
