Tomato Basil Sauce

Yields 4 entrees, 8 sides

Ingredients:

2 oz. olive oil
2 whole cloves of garlic sliced
6 oz. chopped plum tomato
6 oz. chopped yellow tomato
4 oz. dry white wine
1⁄4 T. salt
1⁄4 t. pepper
4 oz. marinara sauce
1 T. chopped parsley
1 T. whole butter
1⁄2 cup grated parmesan cheese


Procedure:

Sautee garlic in olive oil over medium heat for 1-2 minutes, “do not burn.” Add tomatoes and cook for 3-4 minutes longer. Add wine, salt, pepper, basil marinara sauce, butter and parsley. Simmer for 5 minutes longer. Add 1 lb. hot pasta and sprinkle with Parmesan cheese. Toss pasta to blend ingredients and serve immediately.
