Sausage & Peppers


1/4 c. white wine
1/2 onion
2 bell peppers
4 plum tomatoes
1/2 lb. Italian sweet sausage with fennel
1/2 c. extra virgin olive oil
1/2 c. of soy oil
1 lb. penne pasta
fresh parsley
fresh basil
salt & pepper to taste



Slice the sausage into thin slices with a sharp knife. Sear in a hot, non-stick skillet and sauté into golden brown with the soy oil and wine. Chop the onion into finely diced pieces and, in a separate skillet, caramelize the onion with the extra virgin olive oil. Once the onion is golden in the pan, slice the bell peppers and tomatoes and add to the skillet. Let this mixture sauté until the bell peppers are golden. Add the sausage to the pepper and onion mix and let it simmer together for 5 to 7 minutes. Boil the penne pasta for 8 to 10 minutes, until al dente, and toss with the sausage, pepper and onion mix.
