Black Bass Crudo

(single serving)

Ingredients:

1⁄2 extremely fresh black bass fillet, diced
1⁄2 tsp. diced shallots
1⁄2 tsp. chopped fennel
1⁄2 tsp. candied orange peel
1⁄2 tsp. chopped tarragon
1⁄2 tsp. chopped chives
Fresh orange juice
Fresh lime juice
Extravirgin olive oil
Fleur de sel
Fresh microgreens
1 small ring mold


Procedure:
Toss black bass with fennel, shallots, candied orange peel, chives, fleur de sel and a squeeze of orange and lime juices
Place ring mold on plate and spoon mixture into mold
Remove ring mold
Dress microgreens with salt, lemon and olive oil to taste
Top black bass with microgreen salad and serve immediately
