Black Linguine in a Tuna Ragu Sauce


1 lb. homemade squid ink linguine
1/2 lb. smoked tuna
2 chopped plum tomatoes
2 chopped anchovies
1 chopped shallot
1 cup chopped zucchini
2 chopped cloves of garlic
1/3 cup extra virgin olive oil
1 cup tomato sauce
1/2 cup chicken stock
salt and pepper to taste


Heat olive oil in a pan. Add chopped garlic, shallots and cook until golden. Add chopped zucchini, chopped tomatoes and tuna. Cook for two minutes and then add chopped anchovies, tomato sauce, chicken stock, salt and pepper. Cook for another two minutes and then turn off. In hot, boiling, salt water cook the linguine for four minutes. Drain, add on the sauce, toss and enjoy!
