Tuna Nicoise Salad

Yields 4-8 salads

Ingredients:

2 oz. olive oil
1 1/2 oz. lemon juice (or the juice of 1-2 fresh lemons)
1/3 cup chopped red onions
1 cup & 2oz of French green beans, blanched
8 oz. cooked, sliced potatoes
8-10 oz. imported Italian tuna fish in olive oil
1/2 cup pitted olives (Kalamata, Gaeta or Fleshy Green Sicilian)
3 vine ripe tomatoes cut into 1/8th pieces
1 cup packed arugula
1/2 cup iceberg lettuce
1/2 tsp. sea salt
1/8 tsp. black pepper


Procedure:

Combine the ingredients and toss together with the correct seasonings. Plate onto 8 plates for appetizers or 4 plates as the main course.
