Insalata di Tonno con Arugula

(Tuna Salad with Arugula)

Ingredients:

2 oz. extra virgin olive oil
1 1/2 oz. lemon juice (or the juice of 1 or 2 fresh lemons)
1/3 cup chopped red onions
1 cup & 2oz of French green beans, blanched
10 oz. cooked, sliced potato wedges
8-10 oz. imported Italian tuna fish in olive oil, drained and flaked
3/4 cup pitted olives (Kalamata or Gaeta and Fleshy Green Sicilian)
3 vine ripe tomatoes cut into 1/8th pieces
1 cup packed arugula cut into large pieces
1/2 cup washed and chopped iceberg lettuce
3/4 tsp. sea salt
1/8 tsp. black pepper



Procedure:

Combine the ingredients and toss together. Combine the seasonings. Divide onto 8 plates for appetizers or 4 plates as main course. Served with grilled olive loaf or foccacia.
