Pan Seared Skate Fish

 

Ingredients:


For Skate:

4oz. – Skate Fish (Portion)

Flour (for dusting)

Salt & Pepper as Needed

For Caper Vinaigrette Dressing (for Skate):

1 tsp – Parsley (Chopped)

1 tsp – Tomatoes (Diced)

1 ½ tsp – Capers

Extra Virgin Olive Oil (as needed)

Lemon Juice (Fresh Squeezed)

Salt & Pepper to Taste


For Side Slaw:

2 oz – Scallions (Julienned)

2 oz – Red Peppers (Julienned)

2 oz – Carrots (Julienned)

2 oz – Napa Cabbage (Julienned)

Lemon Juice (Fresh Squeezed)

Orange Juice (Fresh Squeezed)


Procedure:

Begin by tossing all slaw ingredients together and seasoning to taste. Set slaw aside. Prepare Caper Vinaigrette Dressing by combining all ingredients. Set aside. Dust Skate with flour and season with salt and pepper. Pan sear over high heat for 2 minutes on each side. Plate Skate and drizzle with Caper Dressing. Serve with slaw.
